I am no food blogger, nor am I any sort of cooking expert. Mostly I cook by throwing a bit of this and a bit of that into a pot, or bowl, or what-have-you. But if you'll indulge me, I'd like to occasionally share some of my favorite things to cook and eat. Today I have a recipe (of sorts) from yesterday's lunch, roasted Brussels sprouts.
Here's how I do it.
Pre-heat your oven to 425.
Clean and chop the Brussels sprouts.
Toss the chopped Brussels sprouts with olive oil, a touch of rice vinegar, smoked Spanish paprika, cayenne pepper, and a good quality salt (I used Red Alder Smoked Finishing Salt from the Meadow.) I can't tell you exactly how much of each of these I use, as I said, I don't measure. I just add the ingredients to taste.
Spread the mixture into a single layer in a pan.
Cook 15-20 min until brown. Toss once midway through. I like to let mine get a little burnt because I like the caramelized taste they acquire.
Roasting is a wonderful way to bring out the flavor of veggies, but your additions make it all the more wonderful.

I love roasted Brussels sprouts! Dale likes them steamed so I go back and forth when I cook them.

I recently got hooked on the roasted Brussels sprouts at my local Whole Foods. They tell me the trick is to use lots of olive oil. I also use sea salt. Can't wait to try your version. I just happen to have some in the refrig ready to go!

I haven't met a roasted vegetable that I don't love! Try a splash of balsamic vinegar sometime!

Roasting is my favorite way to cook vegetables (well, most foods, really!) - it's easy and brings out the flavors. And those browned bits at the bottom of the pan...yum!
